His Favorite Mustard Potato Salad

I had never even heard of Mustard Potato Salad until I met my husband 20 years ago. Since then I have worked to perfect his favorite. A holiday is not complete without this being served.

Ingredients:

2 cup FRENCH'S® Classic Yellow® Mustard

4 lb Potatoes, peeled,diced & cooked

3 tbsp mayonnaise

4 eggs, hard-boiled, cooled and peeled

1 cup red onion, chopped

1/2 cup celery, chopped

1 tbsp ground pepper

2 tsp salt, or to taste

Directions:

In an extra large bowl, combine the mustard, mayo, the yolks from the eggs (chop whites and set aside), pepper and salt. Mash and stir until creamy. Add the potatoes, onions, egg whites, and celery. With clean hands or a large cooking spoon, turn the mixture gently to coat all. Refrigerate until ready to serve. If it is a little dry for your taste, you can add more French's mustard mixed with a tablespoon of Italian dressing.
