Herbed Potato Chips with Crisped Onions

This recipe has been a long time family favorite. It is a quick, simple side dish that compliments many different meals, from the most heartiest to the most light, healthiest recipes. I make this side dish at least once a week and my children can’t get enough. They love to eat the crispy onions and I love to see the smiles on their faces!

Ingredients:

1 cup FRENCH'S® French Fried Onions

1/4 cup olive oil

6 potatoes, medium-sized, washed

1/2 tsp black peppercorns, coarsely grinded

3 tbsp fresh rosemary, coarsely chopped

2 tbsp fresh thyme, finely chopped

1/2 tsp salt

Directions:

Preheat oven to 400 degrees. Cover a large baking sheet with non-stick aluminum foil. Brush 2 tablespoons of olive oil on baking sheet. Using a mandoline or other manual slicer, cut the potatoes into 1/8 inch thick slices (for thicker potato chips cut into ¼ inch slices). Arrange potatoes on baking sheet. Sprinkle evenly with salt, peppercorns, rosemary, thyme, and onions. Drizzle the potatoes with remaining 2 tablespoons olive oil. Bake the potatoes in the oven for 30-35 minutes, or until golden brown. Serve on large platter.
