Egg dishes and corn fritters are favorites with my family. So when I combined the 2 in this frittata I know I would get smiles all around.
Ingredients:
3 tbsp FRENCH'S® Honey Dijon Mustard
8 eggs,separated
1 cup canned cream style corn
1 cup sour cream
1 cup cut corn
3 tbsp minced green onion plus more for garnish
3 tbsp chopped roasted red bell peppers
1/2 cup shredded cheddar cheese
Directions:
Whisk together the egg yolks, creamed corn, sour cream, mustard and the ground pepper in a large bowl till well blended. Stir in the rest of the ingredients till well mixed. Beat the egg whites till soft peaks form. Fold into the egg mixture and pour into a non-stick 12 inch skillet. Bake at 375 degrees 12-15 minutes or till set. Top wedges of the frittata with more onion.
