French's Fish Tacos

I made up this recipe after seeing your contest. My family is always my guinea pigs... of course! My daughter is a very picky eater and said she was not interested in trying the fish. Well, after I placed the fish on the table she changed her mind and loved it. Now, that brought a smile to my face!!

Ingredients:

6 oz FRENCH'S® French Fried Onions

1 lb Firm White Fish fillets

2 Eggs

2 tsp Texas Pete Hot Sauce

4 cup Cabbage, shredded

3 Jalapenos, seeded, chopped

1 cup Red onion, chopped

1/3 cup Cilantro, chopped

Directions:

To make the spicy slaw combine cabbage, jalapenos, onion and cilantro. Put in the refrigerator to marinate while you make the fish. Cut your fish length wise into strips. Whisk together eggs and hot sauce and dip fish in egg wash. Pour the french fried onions on a plate and smash finely. Roll the fish in the fried onions pressing firmly to coat. Heat oil on medium and fry fish about 7 minutes each side or until golden brown. Drain fish on paper towels. Assemble tacos in corn tortillas and top with spicy slaw.
Garnish with avocado, tomatoes and a wedge of lime. I used Tilapia for my tacos and it worked really well. Tilapia is a very affordable fish for people watching their pennies.
