This recipe brings a HUGE smile because it is quick, easy to prepare, uses ingredients around the kitchen, and even my pickiest eater cleans his plate. That's what makes me smile!
Ingredients:
1/2 cup FRENCH'S® Classic Yellow® Mustard
1 lb 4 skinless, boneless chicken breasts
2 tbsp lemon juice
2 tbsp chopped fresh dill
1 tbsp vegetable oil
2 cup cooked long grain rice
Directions:
Lightly flatten chicken to uniform thickness. Set aside.
In a medium bowl, combine French's Yellow Mustard, lemon juice, dill, and oil; beat well. Brush chicken generously with mustard marinade.
Grill or broil on high for 4 minutes. Turn and brush with remaining marinade. Grill an additional 3 to 4 minutes or until chicken juices are not longer pink.
Divide rice among four serving dishes. Top with chicken and serve.
