This is a healthier twist on a Southern favorite--Fried Green Tomatoes. Kids love the crunchy crust and moms love the lycopene and vitamin rich side dish. My kids love helping to make them too.
Ingredients:
6 oz FRENCH'S® French Fried Onions
4 Green Tomatoes
2 eggs
.5 cup all purpose floor
.5 cup corn meal
2 tbsp grated parmesan cheese
.5 tsp salt
.5 cup milk
Directions:
Preheat oven to 375
Mix milk and egg in a bowl. Mix corn meal, flour, parmesan cheese, and salt. Combine flour/corn meal with milk and egg into a batter. Slice green tomatoes into 1/2 inch slices. Crush Frenches Fried Onions into a coarse texture into a bowl.
Dip the green tomatoe into the batter and then dip both sides into the crushed fried onion so they are nicely coated. Place on a non- stick baking sheet. Bake for 20 minutes or until fried onions are golden brown on the top. Serve warm.
