THIS IS AN EASY AND ECONOMICAL RECIPE THAT BRINGS SMILES TO MY FAMILY'S FACES. SOME OF MY CHILDREN LIKE TO SPOON IT ON TO FLOUR TORTILLAS, WHILE OTHERS ENJOY IT IN A BOWL WITH KETCHUP.EVERYONE IN OUR FAMILY LOVES THE UNIQUE FLAVOR THAT THE FRENCH'S ONIONS ADD TO THIS DISH.
Ingredients:
1 cup FRENCH'S® French Fried Onions
2 lb FROZEN DICED POTATOES WITH BELL PEPPERS
2 cup RAW EGGS
1/3 cup SALSA
1 cup SHREDDED MILD CHEDDAR CHEESE
1 cup HAM STEAK,DICED
1 tsp CHILI POWDER
4 oz VEGETABLE OIL
1 tsp salt
1 tsp pepper
Directions:
1. HEAT OIL IN CAST IRON SKILLET.
2. ADD POTATOES AND HAM.COOK OVER MEDIUM HEAT FOR 8-10 MINUTES, OR UNTIL POATOES ARE TENDER AND SLIGHTLY CRISP.
3.SPRINKLE WITH SALT,PEPPER, AND CHILI POWDER.
4.SCRAMBLE RAW EGGS AND POUR OVER POTATO MIXTURE.
5. CONTINUE COOKING,FOLDING MIXTURE WITH SPATULA UNTIL EGGS ARE COOKED.
6. REMOVE FROM HEAT AND TOP WITH SALSA,CHEESE, AND FRENCH'S FRIED ONIONS.
7. TRANSFER SKILLET TO PREHEATED 350 DEGREE OVEN FOR 5 MINUTES.
