Because it's easy and versatile. This is a wonderful side dish, elegant appetizer or Jewish holiday staple.
Ingredients:
1 cup FRENCH'S® French Fried Onions
2 lb Frozen Shredded Potatoes, Thawed
2 Large Eggs
1 tsp salt
1/2 tsp pepper
Directions:
Thaw one 2 lb. package frozen shredded potatoes. Chop 1 C French's French Fried Onions in blender or food processor til fine. Add to potatotes and set aside. Beat 2 large eggs and add to potato mixture. Add salt & pepper to taste. Place in rectangular baking dish that has been sprayed with Pam or other non-stick cooking spray. Bake in 350 oven for approximately 45 minutes or until top is crispy and brown.
May serve with sour cream & applesauce or as an appetizer (see notes below).
For an easy & elegant appetizer you can cut into small squares, top with a small piece of smoked salmon (lox) and a dollop of sour cream.
For an even more extravagant appetizer you can then also add 1/8" tsp. of caviar.
