Easy Perfect Pork Tenderloin

My husband and three kids love everthing I make, but this recipe is always one they look forward to. They feel as if they are eating in a fancy restaurant, but I don't have to pay the high prices for food that is even better! It makes them smile that they get such good food and it makes me smile to save so much money and be able to give my family a meal that makes them so happy!

Ingredients:

4 tbsp FRENCH'S® Dijon Mustard

1 lb pork tenderloin

1 tbsp garlic

1 tbsp rosemary

1/2 tsp cayenne pepper

3 tbsp extra virgin olive oil

1 tsp salt

1/2 tsp pepper

Directions:

Place all ingredients (except the extra virgin olive oil) in a one gallon size ziptop bag. Seal bag completely, then massage ingredients into the pork loin until the meat is evenly coated. Set aside. In a large skillet, heat the olive oil over medium high heat. Once oil is hot, place pork loin in skillet and cook on all four sides for 5-7 minutes each. Be sure not to move meat around unless turning it to the next side. Once meat is cook through, but still moist (approximately 35-40 minutes), let rest for 10 minutes on a cutting board before slicing into medallions. Serve with roasted potatoes and a green vegetable
An additional, but seperate, amount of the marinade/sauce can be made to coat new potatoes to be roasted.
