I have been making this dish for Thanksgiving for about 30 years. Makes a very tasty side dish. Great heated up the next day too!
Ingredients:
1 cup FRENCH'S® French Fried Onions
2 lb Frozen spinach, thawed and drained
.75 cup Vidalia Onion diced
2.5 tbsp Butter, in all
.75 cup Sour cream
.75 cup Jack cheese, grated
.75 cup Cheddar Cheese, grated
1.25 cup Parmesan finely grated
Directions:
Preheat oven to 350
Put drained spinach in medium casserole dish.
Saute onions until tender in 1 tablespoon of butter, 1 teaspoon sea salt and .50 teaspoons pepper. Add to drained spinach. In a bowl, combine sour cream, cheddar cheese, jack cheese, and .75 cup of parmesan cheese. Stir together until blended. Add rest of sea salt and pepper. (At this point you may taste and add more sea salt and pepper if needed. Add mixture to spinach and onions. Melt 1.5 tablespoons butter. In a small bowl, combine the French's French Fried Onions with .50 cup of parmesan cheese and the melted butter. Sprinkle over top of casserole. Cover casserole with foil. Bake 30 min., then bake uncovered for another 10 min.
