Double Onion and Cheddar Omelet

We made these this morning. Just as beautiful as the omelets at the restaurant, but without the price. Very easy for beginning cooks, with impressive results and taste. Kids love helping crush the onions, and sprinkle the toppings. That makes me smile.

2 cup FRENCH'S® Cheddar French Fried Onions

8 large eggs

4 oz cheddar cheese, shredded

4 green onions, chopped

1 cooking spray

4 tbsp water

1/2 tsp salt

1/2 tsp pepper


Crush the French Fried onions into very fine crumbs. In a medium bowl, beat the eggs, water, salt and pepper with a wire whisk. Whisk in the crushed onions. Spray a non-stick 8 inch frying pan and heat over medium heat. When pan is hot, pour ¼ of eggs into bottom. (stir before pouring to distribute onions.) Cook until eggs start to set. Lift one side of eggs with a spatula and tilt pan slightly to let unset eggs run underneath. Sprinkle some of the shredded cheese and green onions down the middle of eggs just as they lose their gloss.. With spatula, flip one third of omelet over cheese. Then flip the other third over top. Place in plate and sprinkle with a little cheese and green onions. Place in warm (200 degree) oven until all omelets are finished. Serve warm.
