Deb's Southern Potato Salad

I used to fix this potato salad for my father. It was absolutely his favorite. Everytime he would come and visit, he knew what I was making for him and I loved doing it. He has since passed away, but I always think about him everytime I make it.

PREP TIME 10 min

Ingredients:

2 tbsp FRENCH'S® Classic Yellow® Mustard

3 lb Red Potatoes

6 Boiled Eggs

3 tbsp White Onions

2 tbsp Sweet Salad Cubes

1 cup Miracle Whip

Directions:

Wash and peel potatoes. Cube and place in 4 quart pot with water and salt and bring to boil. Cook for 20 minutes or until soft. While the potatoes are cooking, put the eggs in a small sauce pan and bring to a boil and boil for 11 minutes. Set aside to cool. Chop onion and set aside. Drain potatoes and put in large mixing bowl. Peel and quarter the boiled eggs and add to potatoes. Add onions, salad cubes, Miracle Whip and French's Classic Mustard. Mix well. Add pepper and salt to taste. May sprinkle with paprika for garnish.
