My family enjoys this meal because it is quick, easy and delicious. In addition, it is a great recipe to get the children involved in the kitchen (measuring, mixing, etc.) and learning about other cultures through spice.
Ingredients:
2 tsp FRENCH'S® Classic Yellow® Mustard
3 cup Rotisserie Chicken - shredded
2 cup Red Seedless Grapes
4 Green Onion or Spring Onion
1 cup Mayonnaise
1 tsp Curry Powder
1/2 Lemon - juice squeezed
4 Pita Pocket Bread
1/2 tsp salt
1/2 tsp pepper
Directions:
Pull and shred meat from a store bought rotisserie chicken - measure 3 cups. Slice grapes in half and chop onions. Combine these ingredients in a large mixing bowl.
To create the "dressing"; combine mayonnaise, French's Classic Yellow Mustard, and curry powder in a small bowl. Let sit for a few minutes to let the flavors meld.
Pour dressing into the chicken mixture and mix thoroughly, squeeze lemon juice and mix again.
Prepare the pita pockets by cutting in half and warming in a 325 degree oven for 10 minutes.
Fill each half with approx. 1/4 cup of the mixture.
