For added SMILES, I cut small sails from the cleaned cucumber peels and thread onto a toothpick - placing one atop each yummy boat.

1/8 cup FRENCH'S® Honey Dijon Mustard

2 Large Fresh Dark Green Cucumbers

4 cup Tuna or Chicken (canned)

1 Medium Tomato

4 oz Sliced Black Olives

1/2 cup Artichoke Hearts or Hearts of Palm (chopped)

2 tbsp capers

1/4 cup Mayonaise or plain non-fat Yogurt


Cucumber Boats 2 fully "developed" fresh dark green cucumbers Clean and peel cucumbers. Cut each lenghtwise, scoop out seeds and cut into four equal lengths. Sprinkle or rub approx. a tsp. of lemon juice or vinegar to scooped out areas. Turn open scooped out side onto napkin or paper plate and set aside. Mix the following ingredients together and then stuff into each cucumber: EITHER canned tuna or chicken,1 medium chopped tomato, sliced black olives, capers ,chopped artichoke hearts OR hearts of Palm FRENCH's Honey Dijon mustard and mayo or nonfat plain yogurt. Stuff approx. one quarter mixture into each cucumber chamber.
May serve on bed of fresh lettuce and perhaps a small scoop of cottage cheese with fruit on the side. (Grandpa likes this with homemade tomato soup.
