Crunchy Wild RIce Cakes

This is a great tasting side dish. Wild Rice has such a great nutty flavor and the love it.

Ingredients:

2 tbsp FRENCH'S® Dijon Mustard

1 cup FRENCH'S® French Fried Onions

3 eggs

1 cup Green Onions, finely chopped

3 cup Wild Rice, Cooked and chilled

2 tbsp Olive Oil

1/4 cup Parmesan Cheese, shredded

1/2 cup Flour

2 tbsp water

1/2 tsp salt

1/2 tsp pepper

Directions:

In a large bowl whisk eggs, mustard, flour, salt, pepper. Stir in green onions, wild rice and cheese. Add water if needed to make it hold together. Heat skillet and a little of the olive oil over medium heat. Form gold ball sized rice mixture and roll in Slightly crushed French's french friend onions. Cook 3-5 minutes per side. Serve warm.
