This is a tasty, quick recipe that even kids love!
Ingredients:
1 cup FRENCH'S® Classic Yellow® Mustard
3/4 cup FRENCH'S® French Fried Onions
1 lb Catfish Filets
1.5 cup Plain Bread Crumbs
2 tbsp Cajun Seasoning
4 cup Canola Oil
Directions:
Begin by coating all fish in French's Classic Yellow Mustard. Fish can be cut into strips or chunks prior to coating.
Prepare breading by placing French's French Fried Onions in a food processor to chop in tiny pieces to resemble bread crumb size. (French's French Fried Onions can be broken by hand chopped with a knife to achieve a similar result.) Combine French's French Fried Onions with bread crumbs and and Cajun Seasoning.
Dredge mustard coated fish in bread crumb mixture to thoroughly cover. Coat all the fish at the same time.
Heat 1" of oil until a tiny bit of breading added to oil sizzles. Begin adding the first pieces of fish coated to the hot oil, being careful not to overcrowd the pan. Fry until golden and drain on paper.

The fish can also be baked in a 400 degree oven until golden. If baked, it is best to place on a pan lined with Reynold's Release foil and 2 tbsp of melted butter should be added to the bread crumb mixture. Bake until golden then turn fish and use the broil setting to brown the second side - when broiling, fish must be constantly monitored.
I like to serve this fish recipe with a green salad and broccoli.
