Crispy Coconut Fish with Tangy Tropical Dipping Sauce

This is one of my "go to" recipes when time is short (which is always!), but I still want to put something delicious on the table. This sweet and crunchy fish with its tangy dipping sauce fits the bill and is guaranteed to bring a smile to your family. Along with bringing a big smile to the cook because it is so simple to prepare.

Ingredients:

1 cup FRENCH'S® French Fried Onions

1/4 cup FRENCH'S® Honey Dijon Mustard

1/2 cup flaked sweetened coconut

6 oz 4 halibut fillets, or other firm white fish (such as tilapia, snapper or cod)

1 cup coconut milk (not cream of coconut)

1 cup apricot-pineapple preserves

3 tbsp orange juice

2 tsp grated fresh ginger

Directions:

Lightly crush French Fried Onions and place in pie plate along with coconut. Dip fish fillets into coconut milk; then coat with onion/coconut mixture, pressing firmly to adhere. Place fish fillets into greased baking dish. Bake at 400°F for 15 minutes or until fish flakes easily with fork. Meanwhile, combine preserves, mustard, orange juice, and ginger in small microwave safe bowl. Microwave on high until warm; stirring every 30 seconds. Serve fish with dipping sauce. Makes 4 servings
