Crispy Cheddar Stuffed Chicken with Cheesy Gravy

Imagine the smiles on your family when they cut into this crispy, deliciously moist chicken and they see mashed potatoes inside. Not to mention just how much they will love the cheddar flavor throughout the chicken and the gravy. Drooling yet? Well, get to cooking!

Ingredients:

2 cup FRENCH'S® Cheddar French Fried Onions

1 cup Milk

3 tbsp Margarine

1 cup Roasted Garlic & Cheddar Instant Potatoes

4 Boneless Skinless Chicken Breasts

12 oz Shredded Cheddar Cheese

1 Egg

1 cup Country Gravy Mix

1 cup water

1 tsp salt

1 tsp pepper

Directions:

Preheat oven to 400. In a medium saucepan, heat milk and 1 tablespoon margarine over medium until it just starts to boil around edges. Remove from heat and add 1/2 pouch instant potatoes, mixing thoroughly. Set aside for later use. Crush cheddar onion rings in a large zip lock bag. Place chicken breasts between 2 pieces of plastic wrap and pound out with a meat mallet until chicken is approximately 1/2 inch thick. Season chicken with salt and pepper on each side and place 1/4 cup of mashed potatoes and 1 tablespoon cheddar cheese on each chicken breast. Roll chicken over mashed potatoes and secure with a wooden toothpick. Dip chicken in beaten egg and roll in crushed cheddar onions pressing down to coat top, bottom and sides. Place chicken seam side down on baking sheet coated with 2 tablespoons margarine. Bake for 12 to 15 minutes, turn chicken over and bake an additional 12 to 15 minutes or until chicken is done. Make gravy by whisking 1/2 package of mix with 1 cup of water in a small saucepan over medium heat. When gravy starts to boil, remove from heat and add remaining cheddar cheese. Remove toothpicks and pour gravy over chicken just before serving. Yum!
Since you will use only half of the pouch of instant potatoes and half of the package of gravy mix, store the remainder in zip lock bags and you will have enough to make this recipe again!
