Chicken MiMi

This recipe is named for a family friend who gave me the idea for the dish. Her name is Mimsy but my two year old daughter called her "Mimi." Chicken Mimi was born! It's a favorite at our house.

Ingredients:

4 tbsp FRENCH'S® Spicy Brown Mustard

4 oz 4 chicken breasts, 4 oz each

4 oz cream cheese (block form)

4 tbsp brown sugar

Directions:

Place mustard in small bowl, and brown sugar on a plate. Pound chicken breasts flat. Cut cream cheese into 4 one ounce slices. Roll cream cheese slice in each chicken breast and secure with toothpick. Smear chicken with mustard, then roll in brown sugar. Place on baking sheet and bake in 350 oven for 30 minutes or until chicken is cooked throughout.
