This dish is mandatory at our family's Thanksgiving and Christmas dinner. The kid's who normally will stear away from the veggies love it, because it's cheesy and crunchy.
Ingredients:
1 cup FRENCH'S® French Fried Onions
8 Squash medium
1 cup Onion
1/2 cup Margarine
8 oz Campbell's Cream of Mushroom Soup
1 cup Sharp Cheddar Cheese - shredded
3/4 cup Carnation Evaporated Milk
3 Eggs slightly beaten
1 tsp salt
1/2 tsp pepper
Directions:
Preheat oven to 350 degrees. Place sliced squash and diced onion into a large pot, cover with water and bring to a boil. Reduce to medium heat and cook until squash is tender. Drain well.
Lightly grease a 2 quart baking dish. Sprinkle a layer of French's French Fried Onion Rings in the bottom of the baking dish.
In a large mixing bowl, combine squash, onion, margarine, cream of mushroom soup, eggs, milk, cheddar cheese, salt and pepper. Mix well. Pour into the baking dish, over the layer of French's French Fried Onion Rings. Bake for Approximately 30 minutes. Casserole should be bubbly. Remove casserole and sprinkle with remaining French's French Fried Onion Rings. Bake for another 5 minutes and serive.
