Cheesy Garlic Stuffed Baby Bellas

My family loves fresh mushrooms! Each New Year's Eve, my husband and I host an appetizer party for our kids. This is one of their favorite dishes on that night. They love the extra crunch and flavor the fried onions bring to the mushrooms.

Ingredients:

1 cup FRENCH'S® French Fried Onions

12 whole portabella mushrooms

6 oz cream cheese, softened

4 slices of bacon, diced

3 oz frozen spinach, thawed and drained

1/4 cup grated parmesan cheese

1/4 tsp smoked paprika

2 tbsp melted butter

1/2 tsp salt

1/4 tsp pepper

Directions:

Preheat oven to 350 degrees F. Spray a large baking pan with a non-stick cooking spray. Break stems off of mushrooms. Cut tough end off of stems. Finely chop the remaining stems. In a large sauté pan, cook bacon until crisp. Remove bacon and drain grease from pan. Add chopped mushroom stems to the pan. Cook until most of the moisture is gone. Combine the mushrooms pieces with the bacon and set aside to cool. Once the mushroom mixture has cooled to room temperature, place it in a large mixing bowl. Gently stir in the cream cheese, parmesan cheese, black pepper and smoked paprika. Using a small cookie scoop or teaspoon, fill each mushroom cap with the cheesy mixture. In a small bowl, crush the French's French Fried Onions. Dip the bottom of each mushroom cap in the melted butter and then coat with the Onions. Place mushrooms on the prepared pan. Sprinkle each mushrrom with additional crushed French's Fried Onions. Bake at 350 degrees for 20 minutes, or until the mushrooms are piping hot.
