This is a great recipe to take to a potluck or family gathering. It makes a lot, is easy to make, and everyone loves the cheesy sauce with the potatoes, bacon, and the yummy crunch of the french fried onions.
Ingredients:
1 cup FRENCH'S® French Fried Onions
8 large potatoes; peeled and cut into 1-inch cubes
1/2 lb bacon; cooked & crumbled into medium pieces
1/4 cup butter
1/4 cup chopped green onions
11 oz condensed cream of chicken soup
1.5 cup grated cheddar cheese
1/2 cup sour cream
1 tbsp salt
1/2 tsp pepper
Directions:
Fill a large pan with water and 1 Tb. salt, boil potatoes until fork tender, about 15-20 min. Drain potatoes and put them in a 9X13 cake pan.
In a medium saucepan, melt butter; add chopped green onion and saute for 2-3 min. Add cream of chicken soup and cheese; heat over low heat until cheese is melted.
Remove from heat; stir in sour cream, bacon pieces, and pepper. Pour cheesy mixture over potatoes. Mix gently to make sure sauce gets throughout the potatoes.
Top with coarsely crushed french fried onions. Bake uncovered for 30 minutes or until bubbly.
