Burrito Bake

It's a high protein meal. It becomes your own meal with the different variations of toppings. And it tastes good.

Ingredients:

6 oz FRENCH'S® French Fried Onions

1 lb ground beef

1.25 oz taco seasoning

16 oz refried beans

1 cup shredded cheddar cheese

8.5 oz corn muffin mix

3 eggs

1.5 cup milk

Directions:

Crumble and brown beef in a large frying pan. Drain fat and place back into pan. Stir in and mix well taco seasoning and refried beans. Spray a 13x9x2 glass or ceramic baking pan with non-stick cooking spray. Spoon meat mixture loosely in pan. Sprinkle with 1/2 can of slighly crushed French's Fried Onions. Then sprinkle with cheese and set aside. Mix milk, eggs, and corn muffin mix in a blender for 15 sec. or with a hand mixer for 1 min. Pour over mixture in baking pan. Gently loosen meat and cheese mixture with a fork to allow liquid to set in. Sprinkle the remaining French's Fried Onions on top of mixture. Place baking pan on the middle rack of a preheated 400 degree oven. Bake for 30 min or until golden brown. Remove from oven and let cool for 5 minutes before cutting. Cut and serve plain or with toppings such as shredded lettuce, chopped tomatoes, chopped black olives, jarred jalepeno pepper slices, sour cream, salsa, taco sauce,and shredded cheese.
