Broccoli Souffle

It's a perfect side dish for gatherings and everyone is always surprised at how yummy broccoli can be! Kids go crazy for this because of the goey cheese and crunch cheddar onion peices. It always makes me smile to see my 5 year old son going back for more!

Ingredients:

1 cup FRENCH'S® Cheddar French Fried Onions

16 oz 2 pkgs. frozen broccoli (cooked/chopped)

1 cup Cream of mushroom soup

2 oz 2 eggs (beaten)

1 cup shredded cheddar cheese

1/2 cup light mayonaise

1/4 cup yellow onion (chopped fine)

Directions:

Cook broccoli according to package instructions. Drain. Crush French's Cheddar French Fried Onions. Mix all ingredients and pour into a buttered baking dish - except reserve 1/2 cup of the French's Cheddar French Fried Onions to sprinkle on top. Bake at 350 degrees for 30 minutes.
