Bacon Double Cheeseburger Soup

My family loves soup, especially in the cool fall and winter months. I’m always looking for fresh new ideas, so I came up with this recipe…it’s a delicious meal in itself that delivers all the flavors of a yummy bacon-double cheeseburger, all while providing you with the warmth of a perfect comfort food...soup!

Ingredients:

2 cup FRENCH'S® Cheddar French Fried Onions

8 tbsp Butter

1 Garlic Clove, Crushed

3/4 cup Flour

8 cup Beef Broth

1 lb Pasteurized Prepared Cheese Product, cut into 1-inch cubes

12 Bacon Slices

1.5 lb Ground Sirloin

1 tsp pepper

Directions:

In a large stock pot, melt the butter over medium heat. Add the minced garlic and then the flour. Stir well until it turns into a paste-like mixture. Add the beef broth and black pepper. Stir well. Add the cheese cubes and reduce heat to low. Simmer over med-low until cheese is melted and soup begins to thicken. Once cheese is melted, stir in 1-1/2 c. FRENCH'S® Cheddar French Fried Onions and reduce heat to low. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove bacon and set on paper-towel lined plate to drain. Remove bacon drippings from pan and add the ground sirloin to the pan. Cook until meat is browned through. Remove from heat and add the sirloin to the soup. Crumble bacon into the soup. Stir well. Continue to simmer the soup on low heat until ready to serve. To serve, place the soup in individual bowls and top with remaining 1/2 c. FRENCH'S® Cheddar French Fried Onions and a handful of regular or garlic-butter croutons (if desired). Enjoy!
I was unable to add the croutons to the ingredient list due to the restrictions, but I truly think that adding them as a garnish brings the various components of a burger joint favorite together in one piping hot bowl of deliciousness!
