Autumn Sausage Stew

This is a hearty stew with a touch of sweetness from the cider. Sure to bring smiles to the faces of even your most finicky eaters.

Ingredients:

4 tbsp FRENCH'S® Dijon Mustard

8 Chicken Apple Sausage Links, sliced into bite sized pieces

3 cup Apple Cider

14 oz Chicken Stock (One Can)

4 tbsp Cider Vinegar

28 oz Garbanzo Beans (large can)

2 lb Potatoes, peeled & cubed

1.5 lb Pre-packaged Butternut Squash, peeled & cubed

1 tsp salt

1 tsp pepper

Directions:

Mix chicken stock, cider and cider vinegar together in a large pot. Stir in mustard until well blended. Add potatoes and squash & bring to boil. Simmer for 15-20 minutes until vegetables are tender. Add sliced sausage & garbanzo beans and simmer for another 20 minutes. Add salt & pepper to taste. Serve with hot biscuits. You may add minced apple to bowls before serving.
