Amy's triple French onion soup

I love French onion soup but, it is usually made with beef broth. This is a lacto-vegetarian version that still hits the spot, made special by the French's french-fried onions.

Ingredients:

2 tbsp FRENCH'S® Reduced Sodium Worcestershire Sauce (30 % less Sodium)

1/2 cup FRENCH'S® French Fried Onions

2 can or carton vegetable broth

12 oz frozen pearl onions (2 boxes)

1 leek, chopped

1 cup three cheese blend, cheddar-colby-mozzarella, shredded

1 cup onion/garlic croutons

Directions:

Open can or carton of vegetable broth and put in large pot on top of stove. Add 2 pkgs pearl onions and simmer on low. Meanwhile, chop the leek and add it to the broth. Add reduced-sodium Worchester sauce. Simmer ten minutes or until leek and pearl onions are tender. Add croutons and French's french fried onions. Cook one minute longer. Remove and fill bowls with soup. Top with shredded cheese and let sit for one minute to melt.
Good for a cold fall/winter day. Serve soup with a mixed-green salad, crackers and/or breadsticks.
