No one in Columbus has potatoes like these. When poeple eat them, the first thing I see on their faces is "WOW! I've never has ANYTHING like this!" THAT brings a smile to my face...and theirs!
Ingredients:
1 tbsp FRENCH'S® Dijon Mustard
5 lb Redskin Potatoes
4 oz Cream Cheese
2 cup Whipping Cream
3 tbsp Garlic Powder
.5 cup Butter
1.5 tbsp Parsley Flakes
1 cup Parmesean Cheese
3 tsp salt
1 tsp pepper
Directions:
Add Potatoes, with skin on, to large pot and cover with warm water. Bring to a boil and cook until fork tender. While boiling, add to a mixer or bowl, all remaining ingredients, except for the whipping cream. Beat until smooth. Drain potatoes and immediatly add to ingredients. Begin to beat on low while slowly adding whipping cream. Once mixture has began to form, beat on high for 5 minutes. You may add in salt and pepper to taste. ENJOY!
I always add tony chachetori creol seasoning to this, as well as 1 tbsp of extra virgin olive oil. Even without, this recipe is delisciouse! I own a Catering Company in Columbus, Ohio, and this is my secound most popular dish, behind my Mac N' Cheese, which also includes French's dijon mustard! I put it in everything!
