It's great for those no-meat nights or your vegetarian family.
Ingredients:
1 cup FRENCH'S® French Fried Onions
15 oz black beans, canned
1 cup brown rice, cooked and cooled
1/4 cup carrots, finely shredded
1/3 cup mexican cheese blend, shredded
1/4 cup picante sauce
2 tbsp cilantro, chopped
2 tbsp cooking oil
1/2 tsp salt
1/2 tsp pepper
Directions:
Rinse and drain black beans. Place in bowl and mash. Lightly crush onions and add to beans. Stir in remaining ingredients except oil. Chill mixture 10 minutes for easier handling. Heat oil over medium heat. Form bean mixture into six patties. Place into hot oil. Cook three minutes each side.
To serve - place on a bun or in a tortilla and top with your favorite toppings. Leftovers - top with an egg for breakfast.
