Oozing Chicken Monsters
My nieces and nephew love the fact that their chicken "oozes" and I love the fact that they are eating greens. This is a fun chicken recipe for the whole family to enjoy!
Ingredients:
1.5 cup FRENCH'S® Spicy Brown Mustard
1 tsp FRENCH'S® Classic Worcestershire Sauce
4 Skinless, boneless chicken breasts
4.5 cup Black Olives, pitted
6 tbsp Extra Virgin Olive oil
1 Green or Rainbow Chard bunch
0.5 tsp Smoked Sweet Paprika
0.5 cup Chicken Stock
0.5 tsp salt
1.0 tsp pepper
Directions:
Preheat oven to 375 degrees. Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness. Roughly chop 4 cups of olives into very small pieces. Combine olives, French’s Spicy Brown mustard and 4 tablespoons of olive oil in medium bowl. Place chicken in shallow baking dish. Cover each breast completely with the olive & mustard mixture. Bake uncovered for 25-30 minutes until chicken is no longer pink in center.
Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium-high heat. When oil is hot, add the greens to the pan and wilt. Season the greens with smoked sweet paprika, salt, pepper and French’s Worcestershire. Add the chicken stock and simmer for a few minutes longer, then remove from heat.
When chicken is done, remove from oven. Cut each chicken breast in half. Place 1 half of chicken on plate, top with 1/4 of swiss chard mixture, then place other half of chicken on top, so that the swiss chard mixture is “oozing” from the chicken. If desired, add olive eyes and tails to each breast using toothpicks so that the chicken breasts resemble monsters. Repeat with remaining 3 chicken breasts.
