Ingredients:
1 cup FRENCH'S® French Fried Onions
1 cup FRENCH'S® Cheddar French Fried Onions
2 Medium Russett Potatoes
4 Strips of Hickory Smoked Bacon (Thick cut)
1/2 cup Cheddar Cheese
2 tbsp Butter
1 egg
1/2 cup Flour
1/2 tsp salt
1/2 tsp pepper
Directions:
Preheat oven to 350 degrees. Peel and rinse potatoes. Cut them into 1 inch cubes then boil them in ½ full pot of water for 10 minutes or until tender. Finely chop bacon strips. Pan-fry until crispy. Grate cheese. Drain potatoes and add salt, pepper, and butter in pot. Drain bacon. Add bacon and cheese and mix well. Let cool for 3 minutes. Roll into 2 inch balls. Roll potato bites in flour. Beat the egg. Roll bites in egg until thoroughly coated. Put French's Original and Cheddar Cheese Onions into food processor. Pulse until fine grained. Coat potato bites in fried onions. Line a cookie sheet with foil. Place loaded baked potato bites on cookie sheet. Bake for 10 minutes.
Recipe makes approximately 12 bites. It is also delicious is served with your favorite sauce or baked potato topping.
