Happy Veggie Tart
It's a great substitute for frittata when you can't eat eggs.
Ingredients:
2.8 oz FRENCH'S® French Fried Onions
2 tbsp FRENCH'S® Dijon Mustard
2 cup potatoes
2 cup zucchini
2 cup tomato
1/2 cup grated parmesan cheese
1 tbsp minced garlic
3 tbsp virgin olive oil
1/2 tsp salt
1/2 tsp pepper
Directions:
Mix mustard, garlic, pinch of salt and oil in large bowl.
Slice potatoes, zucchini, and tomato very thin.
Coat potatoes and zucchini in mustard mixture.
In 9 inch pie dish layer 1/2 of potatoes, 1/2 zucchini, 1/4 cup of cheese, 1/2 tomato, pinch of salt & pepper and 1/2 can of onion rings.
Repeat the layering, ending with any left over mustard mixture.
Bake at 350 degrees for 30min.
Let set for 10 min. before slicing.
Any type of tomatoes can be used.
