Easy French's Mini Quiches
A quiche always brings a smile to my family's face because it is so tasty and beautiful. Unfortunately, the pastry crust often used is time-consuming to make. My easy crust made from French's fried onions not only tastes great, but is easy and quick to make, which makes me happy. Serving it in muffin cups makes it fun and easy to eat, too - great for little hands.
Ingredients:
12 oz FRENCH'S® French Fried Onions
4 tbsp unsalted butter, melted
2 egg yolk
4 whole eggs
1/2 cup sour cream
1/2 cup raw baby spinach, torn into pieces
6 smoked bacon, medium thick slices
1/2 tsp paprika
1/2 tsp salt
Directions:
1. Set oven to 350 F
2. Lightly spray 2 muffin tins (12 muffin cups) with nonstick cooking spray.
3. Cut bacon into 1/2 inch pieces. Cook until crispy. Drain.
4. In a food processor with a steel blade, process French's fried onions, paprika, and salt to fine crumbs. Process egg yolks. With the processor running, drizzle in the melted unsalted butter until the crumbs begin to clump.
5. Put 2-3 tablespoonfuls into each muffin cup and pat into the bottom and up the sides.
6. In a medium-sized mixing bowl, whip the whole eggs until frothy, 1-2 minutes. Whip in the sour cream until smooth. Stir in the torn spinach and crumbled bacon.
7. Pour egg mixture into the crumb crust.
8. Bake for 18-20 minutes until egg is set. Cool in pan for a few minutes. Then remove with a knife or small rubber spatula. Enjoy!
