A NEW TWIST ON TRADITIONAL STUFFED POTATO SKINS. MAY BE SERVED AS A SIDE DISH OR AS AN APPETIZER.
Ingredients:
1 cup FRENCH'S® French Fried Onions
18 oz CHEDDAR CHEESE, SHREDDED
2 tbsp FRESH SNIPPED (1/4 INCH) CHIVES
2 tbsp OLIVE OIL
1 lb 2 LARGE POTATOES
1 tsp CELERY SALT
8 oz 8 SLICES BACON
1 tsp salt
1 tsp pepper
Directions:
SCRUB POTATOES WELL. SLICE LONG WAYS INTO 1/8 INCH SLICES. SPREAD OLIVE OIL EQUALLY ON TOP OF EACH POTATO. PLACE ON GREASED LARGE BAKING SHEET, SPRINKLE WITH SALT, PEPPER, CELERY SALT AND COOK AT 350 DEGREES 30 MINUTES. MEANWHILE COOK BACON, DRAIN AND CRUMBLE. REMOVE POTATO SLICES FROM OVEN. TOP WITH EQUALLY DIVIDED FRENCH FRIED ONIONS, CRUMBLED BACON, CHIVES AND TOP WITH SHREDDED CHEESE. RETURN TO OVEN AND BACK AT 350 DEGREES ABOUT 10 - 20 MINUTES UNTIL CHEESE MELTS. SERVE WITH SOUR CREAM.
BACON MAY BE ELIMINATED FOR VEGETARIANS.
