This recipe, which is the perfect dinner solution for a "busy day", is a twist on a family favorite of ours, Asian Chicken Lettuce Wraps. I bought my sons laminated World map placemats (shown in photo) and we often "travel the globe" at dinnertime learning about the foods eaten in other countries. I decided to sprinkle French's French Fried Onions over the meat for an additional layer of flavor and texture then came up with a sweet n' tangy sauce by combining plum sauce with French's yellow mustard. IT BRINGS SMILES to my two young son's and husband's faces when they find out these are going to be on the dinner menu at our house. It's so much fun for them to be able to build their own by filling the lettuce leaves and rolling them up. An added bonus is that they are quick, easy, and healthy (a vegetable and protein all-in-one).
Ingredients:
2 tbsp FRENCH'S® Classic Yellow® Mustard
3/4 cup FRENCH'S® French Fried Onions
1 lb ground chicken
1/2 cup chopped drained water chestnuts (from can)
3 Scallions (green onions) thinly sliced – both green and white parts
1/2 cup plum duck sauce, divided
1/4 cup hoisin sauce
6 Large leaves iceburg lettuce
2 tbsp water
1/4 tsp salt
1/4 tsp pepper
Directions:
PLACE large non-stick skillet over medium head until hot. Cook chicken, stirring until no longer pink (about 7 minutes). Drain any juice.
STIR in water chestnuts, scallions, 2 tablespoons of the plum duck sauce, hoisin sauce, salt, and pepper. Stir until heated through.
COMBINE mustard, remaining plum duck sauce, and water in small bowl.
SERVE chicken mixture on a large platter, sprinkled with fried onions, alongside lettuce leaves and bowl of sauce. Allow family members to take a leaf, spoon on filling, drizzle with sauce then roll up.

*Plum duck sauce and hoisin sauce can be easily found in the Asian section of the grocery store
